Handles & Knobs (phenolic)
Designed to fit your hand better and provide a safe, sure grip, the phenolic handles and knobs are durable, dishwasher safe, as well as ovenproof to 350°. Square shanks of welded stainless steel prevent handles from loosening and turning, while the wrap-around flame guard prevents the possibility of flame damage.
The moisture seal is designed to cook vegetables with little or no water added to enhance both the flavor and appearance of your favorite vegetable. A more efficient use of energy cooks food evenly from all sides with less heat.

Makes Cooking as Easy as...
1. Scrub and cut fruits or vegetables. Place in the pan and rinse with water, then cover the pan with the vac-control valve open.
2. Place the covered pan over medium high heat. Allow the vapor to escape through the vac-control valve for 3 to 5 minutes.
3. Close the valve and turn off the heat. DO NOT remove the cover. Let stand for 5 to 20 minutes, depending on the recipe, and serve.

Past and Present
New Era is the oldest and most respected manufacture of high quality surgical stainless steel cookware in the United States.
Our company began in 1867, when Jacob J. Vollrath began experimenting with enamel-coated cookware. During the following years, he went to Europe and brought back enamel formulas which he perfected into enameling cast iron cookware. As his innovative product began to catch on, manufacturing was begun in 1874 and the "Vollrath Company" became well known in the trade for the production of high quality cooking utensils.
In the 1930’s, a new steel alloy – stainless – was introduced, and marked the most dramatic development of the Vollrath Company’s product line. Stainless steel for its superior qualities – soon replaced the porcelain –clad materials. We soon expanded our distribution into new market such as hospital and restaurant stainless steel cookware and serving units.
In 1941, we retooled to manufacture stainless steel canteens for the military. More recently, we began to use T304 Surgical Stainless steel because of its properties of being a non-reactive cooking surface. As technological advances come, we apply them to our Cooking System.
In 1981, there was a renewed focus toward manufacturing the best possible product for the home. The name New Era sprang from that focus and need.
